INGREDIENTS
1¾ cups chopped cooked chicken, cooled (about half a BBQ chicken)
½ cup whole-egg mayonnaise 1 tbsp lemon juice 3 celery stalks, trimmed & chopped roughly Half bunch chives, trimmed & chopped roughly Sea salt & white pepper 50g butter, softened 24 slices white or wholemeal bread (or a combination of both to make white & brown bunnies) 8 slices cheddar cheese Equipment Food processor Chopping board Butter knife Spatula 10cm rabbit-shaped cookie cutter Method
Place chicken into food processor and pulse to chop.
Add mayonnaise, lemon juice, celery and chives, and process to combine. Season with salt and pepper to taste. Butter each slice of bread, then place one slice of cheese on the buttered side of 8 of the slices. Top cheese with second slice of bread, and spread chicken mixture evenly over this slice. Top with remaining slices of bread to make triple-decker sandwiches. Cut out sandwiches using rabbit cookie cutter, then serve. Thanks to Real Living Magazine

Makes: 48 Tablespoons Instructions
Preheat oven to 350°F. Spray one 13 x 9 x 2 in. sheet pan or two 8 in. or 9 in. round pans with vegetable pan spray. In large bowl, combine cake mix, pudding mix, eggs, water, oil and almond extract; beat at medium speed with electric mixer 2 minutes. Pour into prepared pan. Bake 30-35 minutes for round pans; 35-40 minutes for sheet pan, or until toothpick inserted in center comes out clean. Cool in pan 10 minutes; remove from pan to cooling grid and cool completely. Divide cake in half; freeze one half for future use. In large bowl, use hands to crumble cake until no large chunks remain. Add icing; mix with fingers until well combined. Form mixture into cake balls. Chill in refrigerator at least 2 hours. Melt Candy Melts according to package directions. Dip sticks into melted Candy Melts and insert into cake balls; let set. Wait until candy is completely firm before dipping the pops completely in melted Candy Melts. Host a Cottage-Style Dinner Party
In a sunny kitchen or a blossom-filled garden, this cottage-cozy tabletop makes the perfect setting for savoring sweet treats and delish conversation. Dress up flea-market outdoor furniture (wicker, wrought iron—even canvas and plastic pieces) with a coat of paint and a matching tablecloth and seat cushions. Add a Dash of Floral
Instead of the usual bouquet, create a blossoming “cake” that looks good enough to eat. Place a piece of floral foam on a glass pedestal; insert fresh carnations, mums, and roses, or flowers from your garden, in layered rings around the foam. Water lightly.

Orange Jelly Pumpkins

Oranges Jelly - we used blackcurrant A sharp knife (and an adult) Instructions:
Cut off the top of the oranges, and scoop the middle.
Mix up your jelly mix following the instructions on the packet. Pour carefully into the orange shells. Leave in the fridge to set.
Using a sharp knife, carefully cut out a face. Yum!
Marshmallow Ghosts and Ghouls
![]() Ingredients:
Marshmallows White chocolate chips or white chocolate Silver ball cake decorations or similar Writing icing Strawberry laces (optional) Directions: Melt the white chocolate or white chocolate chips in a glass bowl in the microwave, or over a saucepan of simmering water. This takes a minute or two. While you are waiting, start making your ghosts. Thread a couple of white marshmallows onto a paddle pop stick for each one. Now dip the ghosts into the melted chocolate and swirl them around to cover the top of the ghosts' "heads". Bring them out and lay them flat on a paper plate for the chocolate to harden, pushing a couple of silver balls on for eyes before it does.
Use a tube of writing icing to draw on a mouth and any other features you would like. Keep in the fridge until you need them.
To make the ghouls, use either white or colored marshmallows. Thread one on per stick. Add some green food coloring to the chocolate and then swirl the marshmallows in it as before, this time covering as much of the surface as possible. Use silver balls for eyes, but this time add some other decoration too: we used strawberry candy strands for hair and would have added chocolate drops for ears if we hadn't eaten them all already! Leave to harden as before.
Creepy Crawly Fruit Punch
Ingredients:
2 10oz packages frozen strawberries, thawed (or equivalent fresh) 1 6oz can lemonade concentrate, thawed (or 1 cup of undiluted lemon squash) 1 bottle ginger ale Gummy worms Instructions: Place the strawberries in a food processor. Add thawed lemonade and process until smooth. Pour into a punchbowl, add the ginger ale and blend well together. Place some of the gummy worms in the punch and put the rest around the top of the punch bowl. Serve with a gummy worm over the side of the cup!

My Big Fat Greek night in …

Amy and her sister cooked up a storm all afternoon and the results were fabulously delicious. Check out these photos of a great night with great food, wine and traditional Greek hospitality. YASSOU! ![]() ![]() ![]() ![]() Menu Recipe Meltingly tender slow-roasted lamb shoulder
Serves 4-6
Juice of 2 lemons
2tsp Dijon mustard
1 cup olive oil
2tsp dried Greek oregano
6 large sprigs thyme, roughly chopped
6 large sprigs rosemary, roughly chopped
5 cloves garlic, crushed
1 boned lamb shoulder (about 1.5kg), some excess fat removed, but not all of it
sea salt and freshly ground black pepper
Begin this recipe the day before.
In a large bowl, combine all the ingredients, except the lamb, salt and pepper. Add the lamb, making sure it is totally covered with the marinade. Refrigerate for at least 12 hours, and up to 24.
Preheat the oven to about 150o C (the temperature will depend on your oven). You can increase the temperature if you need to hurry it up.
Place the meat in a roasting tin and season well with salt and pepper. Roast the lamb for 3-4 hours, basting it from time to time with cooking juices and fat.
When the meat is cooked, leave it to rest for 20 minutes before carving or pulling apart.
